I made this as a non alcoholic dessert.
I whisked 500ml whipping cream with 250g mascarpone and 75g caster sugar. (You can add 75ml marsala or baileys). Mix until it resembles thick cream.
Make up 2tbsp of coffee in 250ml of hot water. Dip (150g) sponge fingers into the bowl of coffee and place into a glass bowl. Repeat with each sponge finger until you’ve covered the base/side of bowl.
Spoon in the cream mixture and dust cocoa powder over the top to decorate and serve!
I did enjoy this but found it was very filling with cream and fattening…so maybe next time I’ll use less whipping cream!
